Dogwood Costa Rica Pie San
Notes of chocolate orange and cherry liquorice with a clean and bright acidity.
Finca Pie-san was purchased in 2012 by producer Luis Alberto Monge. It is his highest elevation farm at 1950 meters in the Tarrazú region, and his coffee is processed at his family's micro-mill - La Lia. This farm consists of mostly Catuai and Caturra varietals. This separated Red Catuai lot has undergone 'honey' process fermentation wherein the coffee is allowed to ferment in a portion of it's pulped fruit mucilage before being washed and dried.
