As you approach the southern border of Mexico you will pass through the highlands of Chiapas, home to the El Triunfo Biosphere Reserve, as well as a number of small scale coffee farms, which are in turn home to flocks of nesting Cotorras, or Monk Parakeets, who lend this coffee their name (look up a picture to brighten your day!). It is the second year Little Sister has brought in a coffee from the region surrounding the Triunfo reserve where some of Central America’s last cloud forests remain protected. The coffee is fully washed and entirely sun-dried, boasting a unique full body of spice, hazelnut, and creamy dark chocolate.

Varietal: Bourbon, Typica, Caturra, Mundo Novo
Altitude: 1300-1700 masl.
